3-Ingredient Energy Balls

The perfect snack for a busy day! These energy balls are simple to make, packed with natural sweetness, and surprisingly delicious. Stash a few in your bag for an on-the-go boost, or share with friends and family to spread good nutrition all around!

Ingredients

  • 1 cup chopped Medjool dates
  • 2/3 cup rolled oats
  • 1/3 cup no-sugar-added peanut butter

Instructions

  1. Soak the chopped dates in a bowl of hot water for 10 minutes, then drain well.
  2. Add the dates, oats, and peanut butter to a food processor. Blend until the mixture is well combined and starts to stick together.
  3. Roll into 16 bite-sized balls.
  4. Get creative with toppings! Roll your energy balls in shredded coconut, finely chopped nuts, cocoa powder, matcha powder, or chia seeds for extra flavor and texture.

These no-bake energy bites are perfect for meal prep and stay fresh in the fridge for up to a week. Enjoy!
